The high-quality oil pumpkins provide soft-shelled seeds that are particularly suitable for oil production. Besides fatty oil, pumpkin seeds contain about 25% protein, fruit acids, resin, lecithin, and cucurbitacins. The chlorophyll contained in the seed coat and the carotene give the pumpkin seed oil its dark color.
