The thin oil ranges from light to dark yellow and is neutral in taste. Rich in unsaturated fatty acids, vitamin E, and soy lecithin, it is a valuable cooking oil. In its natural and unrefined form, it should not be heated strongly but rather used to refine finished dishes. Ideal as a salad oil and as a base for producing margarine, mayonnaise, and other prepared products.
