The light to medium yellow, excellently tasting oil is the highest quality of all edible oils due to its extraordinarily high content of unsaturated fatty acids (~ 80%) and is often used as a dietary supplement. Another special feature is the high content of palmitoleic acid (~ 20%), which is usually only found in such quantities in animal fats.
